VIETNAMESE BEEF STEW BANH MI

Ingredients:
- Traditional Banh Mi, Black Sesame Bread or Whole Wheat Bread from O’Smiles.
- 700g beef.
- 2 carrots.
- 1 onion.
- 2 tomatoes.
- Cashew oil.
- Minced onion & garlic.
- Coconut water.
- Broth seasoning: curry powder, lemongrass, ginger, star anise, cinnamon.
Directions:
- Bake O’Smiles’ Banh Mi in oven or air fryer (remember to preheat the oven before baking Banh Mi). Set: 200°C in 5 MINUTES.
- Marinate the beef with cashew oil and spices and half of the minced onion and garlic, le the meat infuse the spices for 30 minutes.
- Put a little oil in the pot and saute curry powder, onion, garlic, lemongrass, ginger. Then, put the meat in and stir-fry for 10 minutes.
- Add coconut water to the meat with star anise, cinnamon, tomato; and stew for 30 minutes.
- Finally, add the carrots and onions to the stew over medium heat until all are soft.
