Our first stop: Hà Nội - where early mornings are warmed by a delicious hot plate of bánh mì chảo. Crispy bread, served with sunny-side-up eggs, pate, and sausages. It’s that simple, but has fully captured the quiet elegance of the people of Tràng An.
 

Heading down to Đà Nẵng, one of Vietnam’s most desirable beach cities, you’ll find the uniquely local bánh mì kẹp bột lọc. Might sound like an odd combination, but trust me, chewy tapioca dumplings nestled in a crunchy bánh mì will surprise you with its delightful texture symphony.

Continue to follow the coastline, Nha Trang welcomes us with a savory flavor of bánh mì chả cá. A golden brown bread filled with crispy fish cakes, fresh herbs, and spicy chilli fish sauce. Take a bite and you’ll understand what I mean by “the taste of the ocean.” 
 

Up in the highlands, Đà Lạt remains serene and poetic, where people fall in love with both the weather and scenery. Here, nothing will warm your soul in a chilly morning more than a bowl of bánh mì xíu mại. Tender meatballs saturated in tangy broth, served with a crispy loaf of bread. Such a great comforting start to a foggy mountain day!

We cannot skip Sài Gòn without mentioning bánh mì bì - a reflection of the citizens’ character: generosity. Shredded pork skin mixed with fragrant roasted rice powder, paired with pickled veggies and sweet fish sauce. Simple ingredients yet created an unforgettable bite of flavor. 
 

And finally, An Giang wraps up our journey with a truly unique specialty: bánh mì mỡ hành nước cốt dừa - grilled bánh mì with scallion oil, drenched in sweet and salty coconut milk. This dish is a Tân Châu’s local treat that may sound unfamiliar but will be your forever favourite.
